When you roast coffee beans, the starches, fat and sugars that are within the beans are caramelized, emulsified and released. Due to this process, a delicate coffee oil is released. This oil is responsible for giving the coffee its signature taste and aroma. Generally lighter roasts are more acidic and sharper than the darker roasts. How To Roast Coffee At Home
In order to roast coffee at home, following requirements should be followed strictly.
1. Heat the coffee beans to temperatures of 370 degrees F to 540 degrees F.
2. To prevent uneven roasting and scorching, keep the coffee beans in constant motion.
3. While roasting coffee beans there is a lot of smoke produced. Make sure the smoke is carefully vented.
4. The outer chaff of the beans come out due to roasting.
Use Stovetop Roaster
For roasting coffee beans, a popcorn popper is recommended, but if you do not have it at home, you can substitute with a heavy frying pan or a cast iron skillet. When using a frying pan, make sure that the pan does not have absorbed cooking smells. Even though roasting the beans on the stovetop takes longer, it produces a roast with deep notes and more body. The steps involved in roasting coffee beans are given below:
1. Heat the roaster or the frying pan on the stovetop to a medium range or till the temperature reaches about 475 degrees F. Add 8 oz. of green coffee beans, close the lid and start stirring constantly.
2. Keep stirring the coffee beans till they are agitated. The agitation causes the beans to roast evenly. Stir the beans for 30 seconds minimum. The coffee beans will start to crackle after 4 to 6 minutes. The beans will begin to emit smoke at this particular point. Open the windows to let the smoke out.
3. Check the beans after the sound of first crack and roast till the coffee beans reach the desired colour
4. Once the beans reach the colour of your choice, remove immediately from the fire and transfer it into a large metal colander for cooling. To remove the excess chaff, stir or toss the coffee beans
